Potato Gnocchi with Tomato Sauce


Potato Gnocchi with Tomato Sauce
2人份

Gnocchi面团材料:
馬鈴薯 300g
低筋麵粉/中筋面粉 100g
起司粉 25g
海鹽 1/2小匙
雞蛋 1個

红茄酱料:
红番茄 一粒
番茄酱 2大匙
素虾米 适量
红萝卜丝 适量
香菇片 适量
盐 适量
糖 适量
黑胡椒 适量

做法:
(1) 馬鈴薯帶皮直接煮到熟. 可以把筷子插進去看看裡面有沒有熟.
**最好不要削皮,也不要切塊. 預防煮碎吸收太多水分.
(2) 煮熟的馬鈴薯拿出來還熱的時候馬上拿掉皮. 可以用叉子插進去用小刀拿掉皮.
(3) 馬鈴薯放在濾網上用木頭湯匙過濾.最好用這種過濾的方式做. 口感比较好
(4) 先放入起司粉&鹽巴.
(5) 馬鈴薯還溫溫的時候馬上拌均. 確認起司溶化混在一起.
**馬鈴薯捏太多次的話黏度會出來. 攪拌的程度要控制一下
(6) 雞蛋先打散,这样比较好混合.然後倒入5. 裡面混合.
(7) 接下來放入篩過的低筋/中筋麵粉.
(8) 可以用切的動作拌一拌,这样口感比较鬆軟. 捏太多次會生產太多麵筋.
結果煮起來口感太Q硬.
(9) 合起來的樣子. 還有一點鬆鬆的感覺就好了.
(10) 台上打粉後麵團拿出來. 麵團上面撒一點麵粉後稍微調整形狀.
(11) 把麵團滾一滾成条形後中间切半,再将条形面条切成一小粒
(12) 把切好的小麵團放在叉子中間.
**隨時打粉預防黏住
(13) 用拇指壓,然後讓它沿着叉子条纹滾下來,Gnocchi就成形了
**用大力一點壓沒關係,確認做到紋路.
**這個時候麵團肚子(下面)會壓扁,沒關係
(14) 背部(上面)有紋路. 肚子(下面)有凹進去(像口袋),这样醬汁拌一拌的時候会渗透进去,咬起來口感会輕
(15) 做好的麵團. 先放置。一次做多一點可以冷凍起來!

開始做醬汁!
(1) 鍋子裡面加入橄欖油跟虾米. 開中火爆香味.
(2) 然後放入水煮番茄(罐頭),适量水、红萝卜丝和香菇片
**如果用整塊水煮番茄的話鍋子裡面直接抓碎後丟進去就好了!
(3) 放入百里香或自己習慣的香草. 小火繼續煮.
(4) 加入鹽巴、糖&黑胡椒調整味道.即可
(5) 開始煮Gnocchi了!
鍋子煮沸的水加入一點鹽巴後放進去.
(6) Gnocchi浮上來就可以了。把Gnocchi撈出來,
**它肚子(凹進去的部位)有多餘的水. 搖一搖讓水滴下來喔!
(7) 然後煮好的Gnocchi放入(4)裡面.
(8) 拌一拌試味道再調整後就可以裝盤**上面可以撒現削的帕米森起司,黑胡椒,橄欖油.
